Crunchy Banana Cream Parfaits

A very important tip for diabetics: don't skip dessert! After all, you take good care of yourself, so you deserve it! The only trick is not to let your dessert undo the good you've done all day. Here's a great option-- the kids will be especially fond of this treat.


2 eggs, separated
1 cups whole rolled oats
1.2 cup coarsely chopped nuts or seeds of your choice
Pinch salt
1 packets of artificial sweetener
1 pack sugar-free instant banana pudding mix
1 cup skim milk
1 cup plain Greek yogurt


Preheat the oven to 225 degrees F.

Discard the egg yolks, or freeze them for another day. Whip the egg whites in a mixer or with a hand mixer for about 5 minutes, until soft peaks form.

Mix the oats, nuts and salt in a bowl. Pour them over the egg whites and fold them in gently until coated.

Line a baking tray with parchment paper and spread out the oat mixture. Bake for about 45 minutes, stirring about twice through the process.

Stir the mixture one last time and sprinkle lightly with artificial sweetener. Return it to the oven for about 15 more minutes. Remove the granola and let cool.

In a mixing bowl, add the banana pudding mix, milk and yogurt. Whisk for about 2 minutes, till combined and thickened.

Layer pudding mixture with the crispy granola mixture in a cup, and sprinkle some granola on top. Makes four servings.
