Asian-Style Tilapia with Brown Rice

This is a simple fish recipe, and the rice will make a great side dish on its own for many different recipes.

3/4 cup soy sauce
1 tbsp. minced garlic
1 tbsp. ground ginger
1/4 tsp. black pepper
8 small to medium sized tilapia fillets
1 tbsp. peanut oil
2 tsp coconut oil
3/4 cup of steamed veggies (cut into small bits if necessary)
1/4 cup yellow or red peppers, julienne
3 chopped scallions
1/2 tsp. salt
1/2 tsp Chinese 5-spice
2 cups brown rice, cooked

Mix the soy sauce, garlic, ginger and pepper bowl. Add the tilapia, cover with plastic wrap and put it in the refrigerator for 30 minutes to marinate.
Put a frying pan over medium-high heat. Add the coconut oil and the peppers. Cook them for about 3 minutes.
Add the veggies-- you can use any kind. Try some diced, steamed broccoli, peas, chopped spinach or kale. Throw them in and cook for an additional 2 or 3 minutes.
Add the scallions, salt and 5-spice and mix well. Add the rice and stir until the ingredients are mixed and the rice is heated through.
When the fish finishes marinating, put out a large, heavy nonstick pan on medium-high heat and let it heat up.
Add the peanut oil to coat the pan, then add the fish. Cook the fish for a couple of minutes on each side, until it becomes flaky and opaque.
Serve the fish with rice. Serves four.
